These Crispy Herb & Cheese Chicken Fritters are essentially juicy, flavorful chicken patties with a golden, crispy exterior. They come together in about 20 minutes and are perfect for a quick dinner, meal prep, or appetizer.

Ingredients

For the Fritters:

· 1 lb (450g) Ground chicken (or finely chopped chicken breast)
· 1/2 cup Breadcrumbs (Panko works best for extra crispiness)
· 1/2 cup Parmesan cheese (finely grated)
· 1/4 cup Mozzarella cheese (shredded, for gooeyness)
· 2 cloves Garlic (minced)
· 1 large Egg (lightly beaten)
· 2 tablespoons fresh Parsley (chopped, or 2 tsp dried)
· 1 tablespoon fresh Dill or Chives (chopped, optional but recommended)
· 1/2 teaspoon Salt
· 1/4 teaspoon Black pepper
· 1/4 teaspoon Paprika or Red pepper flakes (optional, for heat)

For Frying:

· 2-3 tablespoons Olive oil or Avocado oil (for pan-frying)

Instructions

  1. Mix the Ingredients (5 minutes)

· In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, parsley, dill (if using), salt, pepper, and paprika.
· Mix with your hands or a fork until just combined. Be careful not to overmix, or the fritters can become tough.

  1. Shape the Fritters (3 minutes)

· Scoop out about 2 tablespoons of the mixture and form into small patties (about 2-3 inches wide and 1/2-inch thick). Wet your hands slightly to prevent sticking.
· You should get about 10-12 fritters.

  1. Pan-Fry to Crispy Perfection (8-10 minutes)

· Heat a large skillet (cast-iron is best) over medium heat. Add enough oil to coat the bottom of the pan generously.
· Once the oil is shimmering, place the fritters in the pan in a single layer. Do not overcrowd; cook in batches if necessary.
· Cook for 3-4 minutes per side, until golden brown, crispy, and cooked through (internal temperature should reach 165°F / 74°C).
· Transfer to a plate lined with paper towels to drain excess oil.

Serving Suggestions

· Dipping Sauce: Serve with Tzatziki, Ranch, Honey Mustard, or a simple Garlic Aioli.
· As a Meal: Pair with a fresh Greek salad, roasted vegetables, or the Garlic Flatbreads from the previous recipe.
