Instructions

Step 1: Prepare the Pie Crust

  1. Roll out the pie dough on a lightly floured surface to about 1/8-inch thickness.
  2. Transfer the dough to a pie plate, trimming the edges and crimping them.
  3. Refrigerate the crust for 30 minutes to firm up.

Step 2: Blind Bake the Crust

  1. Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  2. Line the chilled pie crust with aluminum foil and fill it with pie weights or dried beans.
  3. Air fry for 10-12 minutes until the edges are lightly golden.
  4. Remove the foil and weights, then set the crust aside.

Step 3: Prepare the Filling

  1. In a saucepan, whisk together sugar and cornstarch.
  2. Gradually add milk, stirring until smooth.
  3. Heat over medium, stirring constantly, until the mixture thickens and bubbles (about 2 minutes).
  4. Remove from heat and stir in butter and vanilla extract until smooth.

Step 4: Assemble and Bake

  1. Pour the filling into the pre-baked pie crust.
  2. Sprinkle ground cinnamon evenly over the top.
  3. Return to the air fryer and bake at 375°F (190°C) for 12-15 minutes, until the pie is set and golden brown.
